Make an outline of icing
around the edge of each cookie.
Then fill in the middle.

Leave the cookie as a solid
colour or add a design using
a different colour of icing.

Let the icing harden
before serving the cookies.

Put the icing sugar and cream
of tartar in a large bowl.

Slowly add the egg whites and
vanilla, beating on low speed for
1 minute. Then beat on medium-
high for about 3 minutes to
thicken the icing.

Spoon the icing into small
bowls. Add food colouring (if using)
to each bowl.

Dip a spoon in water so the icing falls
off easily. Scoop the icing into piping bags.
